We all know the way to a man’s heart is through his stomach, right? So date night at home is the perfect time to impress!
But we’d rather be spending our time preparing for our hot date than slaving over a hot stove, so here are some simple and delicious dishes that will have him super impressed by your culinary skills…
There’s nothing like entering a home filled with the delicious smells of a home cooked baked dinner. Not only will this lamb melt your guy’s mouth, it will also melt his heart. He’ll be so impressed with the effort and love you put into it – he doesn’t need to know that it actually takes very little effort at all!
1.5kg lamb shoulder (bone in)
6 cloves garlic peeled
Rosemary
Olive oil
Salt and pepper
Preheat oven to 250 degrees Celsius
Score lamb with a sharp knife
Rub with a little olive oil and season with salt and pepper
In cuts put whole garlic cloves and rosemary
Place in an baking tray, cover with foil or lid and place in oven
Reduce temp to 150 degrees Celsius
Cook for 3-4 hours, lamb should fall apart
Serve with cauliflower mash and your choice of steamed greens.
** leftovers can be frozen for later use
Vietnamese Lettuce Cups
Plans changed and now you will be entertaining at home and need to whip something up fast? Don’t worry about grabbing takeaway, whip up something healthier, quicker and just as tasty with these Vietnamese Lettuce Cups…
300g pork mince
100g bean sprouts
1 garlic clove minced
1 Tbs grated ginger
¼ cup tamari soy sauce
4 Iceberg lettuce leaves
1 coarsely grated carrot
½ cucumber in matchsticks
6 snow peas sliced finely length-ways
½ green apple grated
¼ cup finely sliced mushroom
1 sprig coriander chopped
1/3 cup fresh mint leaves picked
Lime
Fresh chilli (optional)
Arrange all vegetables and herbs on a platter
Heat 1 Tbs coconut oil in a wok or large fry pan on med-high heat
Add ginger, garlic, pork mince and sauce
Cook until all mince is cooked
Stir in bean sprouts
Place a lettuce cup on your plate and load it up with the vegetables, meat mixture and apple.
Top with coriander, mint and some fresh chilli
**If your date is a little on the hungrier side, bulk up the mince mixture with some brown rice
Dessert, the time to really impress. But that doesn’t mean it has to be complicated! Keep it simple with this decadent, rich dessert that he will not guess is actually healthy (shhh, he doesn’t need to know!) They can be whipped up last minute, or plan ahead and make the day before.
1 banana
½ an avocado
50g quality dark chocolate (85%)
1/3 cup coconut water
1/3 cup cashews
2 Tbs nut butter (we use cashew)
2 Tbs rice malt syrup
½ tsp cinnamon
Pinch salt
Blend together in a high speed food processor, refrigerate until ready to eat.
Top with fresh berries & chopped nuts.
